|| Vanilla Protein Pancakes ||

Pancakes. The mother of all breakfast food. Comforting, fluffy, and delicious. They make any morning that much more special.
But if your health consciousness or trying to trim up a little you may be avoiding them. 

I don't know about you but it's torture to crave something so delicious and not be able to fit it in your macros. I have been experimenting with a "healthy pancake recipe" for a year now and finally found one that works not just for macros but for the tastebuds too.

Protein is key to building and or maintaining muscle. Most people just down a protein shake. I can't do that. Being lactose intolerant isn't the issue. There are plenty of plant based protein powders to choose from. It's the texture that gets me. I HATE protein shakes! I gag almost immediately...

So I had to think of something else. And after a little research I found out that you can bake with protein powder. Thank God!

I've tried quite a few different recipes and let's just say... some tasted just like cardboard. Until I tried this one. No it's not a perfect pancake filled with sugar and bleached flour but it's the closest I've ever tasted. Remember that it's all about the consistency of the mix. Not too much liquid, not too little. You want some lumps!

It's very simple. Three basic ingredients.

1 scoop vanilla protein powder
1 egg
Enough coconut milk to get the correct consistency

Optional topping

1tbs almond butter
1-1.5 tbs syrup
Place in microwave for 15 seconds and mix well before pouring over pancake.

Step 1

First off you will need a bowl, whisk, a pan, and a spatula.

Step 2

You will need an egg. I used a farm fresh egg from a few dozen a coworker gave me :)
Then (in french accent) one must beat the egg..

(clearly I'm making this more dramatic than it needs to be).

Step 3

(This should really be done by now, I mean it is only 3 ingredients for God's sake! *but clears throat anyways*)

Add the protein powder!

Step 4

Add Coconut Milk
I use Kroger's Simple Truth Non-Dairy milks because they usually have less preservatives and my stomach prefers less preservatives. If you use almond milk it will be much dryer and flatter. Coconut milk makes it fluffy!

Add just enough to get the right consistency. I never measure it. I always eyeball everything lol. It's somewhere between 1/8 and 1/4c. Start with 1/8th to be safe. You can always add more, you can't take any away though...

Step 5

Mix until lumpy (not exactly a phrase you hear everyday).

Step 6

Oil up!
I do use a non-stick pan but I still like using a teaspoon of coconut oil in the pan for these. I prefer coconut oil because for starters any other oil would taste weird, and my stomach hates other oils. 

Why not butter? Duh!
Butter is fine. But I'm lactose intolerant so I avoid it.

Step 7

Pan-fry that baby!

Step 8 (optional topping)

While you're frying up that deliciousness you could take 20 seconds to make a topping.
It's just 1 tablespoon almond butter (you can use peanut, I'm just allergic lol!) and 1-1.5 tablespoons of syrup. I literally eyeball everything!
About a tablespoon of almond butter, who know though!

 And added syrup :)
Then pop it in the microwave for 15 seconds and stir until it looks like this.

A Naked *slightly burnt* Pancake

I promise my next one came out much better! You know, not burnt! Matthew ate this poor burnt-ish-looking one. Mind you, he is very picky about the taste and texture of his food and he ate this with a peanut butter version of the topping and loved it! :)

And mine with an ugly but delicious topping lol.

Now take a bite

 Did I mention it's 30g of protein, 25 carbs, and 15g of fat with the topping!
